Want to host a weekend brunch party but don’t know what to serve to your guests in place of eggs? One of my favorite products that is perfect for this type of occasion is Lucini Italia Cinque e’ Cinque Tuscan Chickpea Frittata Mix. This packaged chickpea flour mix makes an excellent pseudo-egg dish. It’s a healthy alternative to eggs (no cholesterol) as well as a substantial choice for a filling main dish. The mix contains protein and dietary fiber, is gluten free, and comes in three different flavor combinations (chili, rosemary, and traditional). It can be used as a base for many different recipes. I often make a quiche with it by preparing it according to the directions and then stepping it up a notch by folding in a rainbow of organic produce into the batter. Spinach, mushrooms, tomatoes, leeks, or onions make a great flavor combination along with some grated non-dairy cheese. Another favorite recipe is to place thinly cut tomato slices along the top with a sprinkling of nutritional yeast, salt and pepper, and fresh basil after cooking.
